Growing up my parents idea of a salad consisted of shredded iceberg lettuce, cucumber and tomatoes, which is quite possibly the blandest food combination ever! This is the reason I refuse to have boring salads, by mixing seasonal vegetables, herbs, nuts, fruits, cheeses and different homemade dressings I realised salads can be exciting and fulfilling.

Before I share the ingredients with you I must point out that I have only grown the herbs. Once our house has been renovated I can move onto the garden and I plan to grow all of the vegetables used in this salad. I’m too honest to have you believe everything was fresh out of my garden this morning.

Zesty Feta and Summer Green Salad

Ingredients:

For the salad
100g broad beans
60g podded garden peas
¼ cucumber
½ green pepper
40g shredded spinach
60g crumbled feta cheese

For the dressing
Zest and juice from ½ a lemon
2tbsp extra virgin olive oil
1tbsp chopped mint
½ tsp honey
1tbsp snipped chives
2tbsp chopped parsley
Salt and pepper

Method:

1. Cook the beans and peas in a pan of boiling water for 2-3 minutes until just tender. Drain ,rinse under cold water to cool, then drain again. Pod the beans from their skins and put the beans in a bowl along with the peas, discard the bean skins. If you are using frozen broad beans they usually come podded.
2. Cut the cucumber in half lengthways and scrape out the seeds using a teaspoon, slice into half-moons and throw in with the beans and peas.
3. Deseed the green pepper, slice lengthways, chop the slices in half, then add to the bowl along with the shredded spinach and crumbled feta.
4. In a small bowl whisk together the dressing ingredients using a fork then gently mix the dressing into the salad.
5. Serve with toasted flatbreads.

This will serve two people for lunch.

Why not try using different beans, swapping vegetables (Courgettes or Asparagus would be nice), or add some roast chicken. If you do experiment with the salad please comment to let me know how it turned out!
