Creamy Lemon and Herb Overnight Oats
These invigorating Lemon and Herb Overnight Oats will definitely perk up your mornings.
Breakfast is the most important meal of the day. Not because it provides us with energy and essential nutrients we need, but because of Breakfast Club! It’s an event that I look forward to the most each month. I’m not going to go into too much detail just yet, but I will say it’s the best way to stay connected to the ones you love but maybe don’t get to see too often. The date of the next Breakfast Club has been set and it’s at our house so keep an eye out in early September when I post about it, I will introduce you to the conception, club members and recipe ideas.
Breakfast club makes me look for interesting and new recipes. I know overnight oats are not new or different however these are divine, the addition of aromatic herbs transforms the creamy lemon oats into a decadent breakfast.
Ingredients
50g Rolled oats
1tsp Honey
1/4tsp Vanilla extract
100g Fat free Greek yogurt
100ml Semi skimmed milk
1tsp Lemon juice
Half lemon zest
40g Raspberries, chopped in half
Select one herb:
3 Sprigs of lemon thyme
1tsp Lemon verbena
6 Basil leaves
Method
Step one: Measure all the ingredients into a Kilner jar, finely chop the herb of your choice and add to the mixture. Give it a good stir and pop in the fridge overnight. Enjoy in the morning with a cuppa, it’s that simple. This recipe serves one person.
Overnight oats are perfect to take to work with you, especially if you’re always in a rush in the mornings and tend to skip breakfast!
