Quick No Fuss Eaton Mess
My Quick No Fuss Eaton Mess is a dessert that can be thrown together in 20 minutes. Absolutely no kitchen skills are required, the messier it is the tastier it looks!

- 400 ml double cream
- 8 meringue nests
- 500 g strawberries stalks removed
- 20 g icing sugar
- 10 ml fresh lemon juice
- 1 tsp vanilla extract
Chop 300g of the strawberries. I chop small strawberries in half and larger strawberries into quarters.
Pop the remaining 200g of strawberries into a blender with 10g of icing sugar and the lemon juice. Blitz until smooth. You could also use a hand blender.
Pour the double cream into a bowl, add 10g of icing sugar and the vanilla extract. Whisk until you reach soft peaks, then give it short sharp burts until the cream can just hold it's shape. This doesn't take long with an electric whisk so keep an eye on it. See notes in the blog post for the achieving the right consistency.
You will need a large serving plate to assemble the Eaton Mess. Crumble 2 meringue nests on the serving plate. Dollop a quarter of the whipped cream. Top with a quarter of the chopped strawberries. Drizzle over some strawberry puree and repeat until you have an Eaton Mess mountain. Serve straight away with any remining strawberry puree.
