Homemade Creme De Mure

Homemade Creme De Mure is a delicious liqueur made from red wine and blackberries. This sweet velvety drink is best enjoyed over ice or in the classic Bramble cocktail.

Ingredients

  • 500 g large ripe blackberries
  • 70 cl bottle of medium bodied red wine
  • 500 g caster sugar
  • 300 ml gin

Instructions

  • Place the blackberries in a colander. Run the cold tap over the blackberries to rinse them. Leave to one side for 10 minutes to allow to drain.
  • Pour the wine and blackberries into a large bowl and mash with a potato masher. Cover the bowl and place in the fridge for 2 days, mash the blackberries daily. 
  • After 2 days line a sieve with muslin and place over a large pan. Pour in the blackberry mixture, place in the fridge and let it strain for an hour. 
  • Add the sugar to the pan and place over a medium heat. Stir until the sugar has dissolved then turn down the heat and allow to simmer for 30 minutes, until the liquid has thickened into syrup. Do not be tempted to boil the mixture, this can impact the flavour. 
  • Remove from the heat, stir in the gin and carefully pour into sterilised bottles. Store in a cool dark place for up to a year.
  • Enjoy over ice or make a refreshing Bramble cocktail (see the recipe below).
