Ingredients
400gmixed tomatoes roughly chopped
2tbspextra virgin olive oil
1tspwhite wine vinegar
Juice of 1/2 lemon
6fresh mint leaveschopped
small bunch of parsley chopped
salt and pepper to taste
Instructions
Place the chopped tomatoes into a salad bowl. Whisk the extra virgin olive oil, vinegar, lemon juice, fresh herbs and salt and pepper together in a small bowl. Pour the vinaigrette over the tomato and stir to ensure all are well coated.
