Ingredients

  • 400 g mixed tomatoes roughly chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • Juice of 1/2 lemon
  • 6 fresh mint leaves chopped
  • small bunch of parsley chopped
  • salt and pepper to taste

Instructions

  • Place the chopped tomatoes into a salad bowl. Whisk the extra virgin olive oil, vinegar, lemon juice, fresh herbs and salt and pepper together in a small bowl. Pour the vinaigrette over the tomato and stir to ensure all are well coated.

Serve with Tangy Labneh and Spice Tomato
